"We are located in Salisbury Township in the Lehigh Valley (*not Northampton County)." That's a direct quote from Bolete Restaurant's own website, tucked into its directions page, because enough diners have shown up in the wrong place that the restaurant now corrects the record before you even leave your driveway.
If you live in Salisbury Township, you've probably run into some version of this. Your bakery receipt says Bethlehem. Your delivery app routes to Allentown. Your GPS occasionally tries to send you somewhere in Northampton County entirely. None of this is a coincidence and none of it is really about GPS. It's about a fact most residents never get told outright: Salisbury Township isn't one piece of land. It's two, and Allentown and Emmaus sit in the gap between them.
Two Pieces of Land, One Name
Salisbury Township's borders don't form a single connected shape. Emmaus and Allentown carve through the middle, splitting the township into two separate, non-contiguous sections that share a name, a school district, and a police department but don't actually touch. The villages of Farmington, Gauff Hill, and Summit Lawn sit in the eastern portion. Dorneyville, meanwhile, straddles the northwestern edge and spills into neighboring South Whitehall Township as well, which means even that corner of the map is shared property.
This isn't trivia for a pub quiz. It's the reason so much of daily life here comes with a small asterisk. When a business sits near one of those internal seams, whichever post office happens to route its mail decides what city shows up on the label, regardless of which township actually taxes the property, plows the road, or sends a fire truck if something goes wrong. Municipal lines and postal ZIP boundaries were never drawn to match, and Salisbury Township, split the way it is, ends up on the losing end of that mismatch more often than most.
The Restaurant That Corrects Your GPS
Bolete is the clearest example, because the restaurant has stopped waiting for people to figure it out on their own. Set inside a former stagecoach stop dating back to the 1700s, the restaurant built its name on a farm-to-table menu from chef-owner Lee Chizmar, a Salisbury Township native who trained in Boston and San Francisco before bringing that experience home. Bolete has twice landed on OpenTable's 100 Best Restaurants in America list, and Chizmar was a James Beard Foundation semifinalist for Best Chef, Mid-Atlantic, in 2015.
None of that stops GPS apps from routing diners to the wrong side of a township line. Bolete's directions page now offers a landmark address, 1801 Broadway in Bethlehem, the corner the restaurant actually sits catty-corner from, for guests whose navigation keeps failing them, and states plainly that the restaurant sits in Salisbury Township, not Northampton County, no matter what a mapping app insists. If a restaurant with two national accolades still has to explain its own address to first-time visitors, that's a sign the confusion runs deeper than one bad GPS pin.
A Century on Broadway, Filed Under Bethlehem
Vallos Bakery tells a similar story from the opposite direction. The bakery traces back to 1926, when Stephanos and Kathleen Skoutelas bought it from their former employer, the Vallos Baking Company, and relocated it from Fountain Hill onto Broadway in Salisbury Township. The business passed to their three sons, Nicholas, George, and Gus, and in 2005 was bought by Nicholas's daughter Tina and her husband, who have since opened two more Vallos locations at farmers markets in Allentown and Slatington.
Here's where the mismatch shows up. Vallos Bakery's own current marketing lists its flagship shop as being in Bethlehem, using the 18015 ZIP code its mail happens to route through. But when a fire broke out in a shed behind the bakery in August 2023, the agencies that showed up weren't Bethlehem's. It was the Eastern Salisbury Fire Department that put out the blaze, and Salisbury Township Police who documented the scene. Whatever ZIP code ends up on a receipt, the emergency responders that actually cover that stretch of Broadway answer to Salisbury Township, full stop. That's the difference between an address and a jurisdiction, and it rarely gets pointed out until something happens that forces the two to collide.
Where the Line Runs Through the Mountain
The confusion isn't limited to storefronts. It runs straight through the hillside too. Big Rock, a cluster of boulders standing roughly 30 to 40 feet over the top of South Mountain, sits directly on the border between Salisbury and Upper Saucon Townships, a fact most hikers passing through never notice because nothing on the trail marks the switch.
That same stretch of South Mountain is home to South Mountain Preserve, Wildlands Conservancy's first protected property, permanently preserved back in 1973. The preserve covers 440 acres and nearly 12 miles of woodland trails used for hiking and mountain biking. One of those routes, Kline's Lane Trail, is built specifically as an ADA-accessible connector between the preserve and Emmaus' Klines Lane Open Space, meaning a walk that starts in Salisbury Township can end in Emmaus without a single sign telling you when you crossed over. The trail network was designed to ignore the boundary entirely, which is a nice reminder that the line only matters when someone official needs it to.
What Actually Follows the Real Boundary
It helps to separate what tracks the postal address from what tracks the actual township line, because they answer to two different systems entirely.

- Default pins on GPS apps and food delivery platforms
- The city name printed on a lot of local marketing, including restaurant and bakery websites

The Township Keeps Building Anyway
None of this boundary confusion has slowed the township down. In November 2025, Giant opened a larger, 68,000-square-foot store inside the South Mall Shopping Center at 3300 Lehigh Street, complete with an on-site fuel station, replacing the company's older West Emmaus Avenue location that had served the area for years. A few doors down in that same shopping center, Ohana WonderTown Playground, a multi-level indoor play space for kids, opened back in July 2023.
Community life keeps its own rhythm too, independent of what any address label says. This year's National Night Out brought vendors, K-9 demonstrations, a dunk tank, and a car show to the lot at Salisbury Middle School on Aug. 4, hosted the same way it has been for years. Back in June, residents turned out for Salisbury Night at the IronPigs, a township-branded evening at the ballpark that had nothing to do with a ZIP code and everything to do with who actually calls this place home.
That's the real takeaway. A mailing address can say almost anything, depending on which post office happens to route the mail. But the fire department that responds, the school your kids attend, and the events the township puts its own name on all answer to the same boundary, split in two as it is.
